Beetroot mini pies are perfect party snacks. Even people who doesn’t like red beet, usually eats them. Recipe is easy to do and needs only 15 minutes of baking. I’m not sure where this recipe originates, but I got it from my best friend, this recipe is her speciality and I would like to share it with you.
You will get about 32 pieces from these ingredients:
- 500 g puff pastry
- 2 small boiled beetroot
- 1 package (100 g) of blue cheese
- sprinkle of thyme
- 1 egg for brushing
Roll the pastry into two even pieces, cut about 32 squares of them.
Tip! Take a drinking glass that it’s bottom is about same size as the red beet is. With the bottom of glass press the trails into every square as in the pictures belove. It is needed so the pastry could rise nicely
Slice the boiled beetroot and add it over the pastry, strew some blue cheese and finally sprinkle thyme. Mix the egg in a cup and brush the pastry squares over with it.
Put it in a oven about 220°C/428ºF for 15 minutes until they are golden.
