I absolutely love this recipe, I got it from my close friend, while I was travelling in California. I was eager to taste new flavours and this is the recipe I fell in love with. Now every time I’ll do this recipe, I remember positive vibes from my trip. It’s an Indian dish from the Rich Hingle’s cookbook “Vegan Richa’s Indian Kitchen”. I have changed this recipe just a little for my taste.

Cauliflower florets snacks for 4 person:

  • 1 cauliflower head
  • 1/2 chopped red onion
  • 1 cup unbleached white flour
  • 3 Tbsp cornstarch
  • 1 tsp salt
  • 1 tsp Garam Masala
  • 1 tsp cayenne
  • 4 cloves garlic
  • 1 tsp hot sauce or sweet and sour sauce
  • 1 tsp curry
  • 3 Tbsp soy sauce
  • 1 cup water
  • 2 tsp neutral oil

Preheat the oven to 425F/220C. Blend all the ingredients for the batter in a blender until smooth and pasty. Transfer it to a large bowl. If the batter is too liquid, add some tablespoons more flour and mix well.

Add the cauliflower florets to the batter, toss to coat, and let it marinate about 15 minutes. Mix to coat again. Place the florets on a parchment-lined baking sheet, and spray with oil.

Bake for 20 minutes, then rotate the baking sheet. The total baking time is 30 to 35 minutes.

Tip! If you like healthier recipe, instead of white flour use wholegrain flour. Make it then half a cup white flour and half a cup wholegrain flour.

Tip! If you like spicier tastes, then use hot sauce. But if you like rather mild tastes, use sweet and sour sauce.

For the garnish you could make a dip from yoghurt or as ever you like. They are really great snacks even without dip sauce.

  • poolik tükeldatud punane sibul
  • 1 tass (240 ml) jahu
  • 3 Spl maisitärklist
  • 1 tl soola
  • 1 tl Garam Masala maitseainet
  • 1 tl cayenne maitseainet
  • 4 küüslaugu küünt
  • 1 tl tšillikastet
  • 1 tl karrit
  • 3 Spl sojakastet
  • 1 tass (240 ml) vett
  • 2 tl taimeõli

Kuumuta ahi 220C kraadini. Saumikserda või blenderda kokku kõik koostisained. Kui vaja, siis aseta tainas suuremasse kaussi, sest järgmise sammuna lisa taigna hulka tükeldatud lillkapsaõisikud. Sega lillkapsast taignas ja lase marineeruda umbes 15 minutit. Seejärel sega lillkapsaid taignas veelkord. Jälgi, et kapsas oleks ühtlaselt kaetud taignaga, vajadusel lisa jahu juurde.

Aseta lillkapsaõisikud küpsetuspaberiga kaetud ahjuplaadile ja piserda üle õliga.

Küpseta kokku 30-35 minutit, poole peal võid kapsad ümber keerata, et nad küpseksid ühtlasemalt.

Tip! Kui sa soovid teha selle retsepti veidi tervislikumaks, siis pane pool klaasi tavalist jahu ja pool klaasi täisterajahu.

Tip! Kui sa armastad teravaid maitseelamusi, ära hoia tagasi tšillikastmega. Kui on lood vastupidised, siis võid tšilli asemel kasutada magushapukastet.

Serveerimiseks kaste ei ole niivõrd oluline, sest need snäkid sobivad ka niisama süüa. Kui aga on soovi, siis sobib jogurti – hapukoore dipikaste siia kõrvale kui valatud.
