These biscuits are called Raweos, because they are raw- it means no baking and they remind cookies named Oreo. If you haven’t tried raw deserts before, then this recipe is exactly for you! It will taste good for everybody and beside that they are full of good fat- pecans. This recipe is inspired from Hippie Lane and is from Lovingearth blog.
You will get about 10 biscuits from these ingredients:
- ¾ cup (90g) pecans
- 1 cup (150g) dates
- Pinch of salt
- 1 tsp pure Vanilla Powder
- 3 tbsp Cacao Powder
For the filling:
- 1 cup Cashews, soaked for 2+ hours
- 1 tbsp Coconut Oil
- 1 tbsp maple syrup or agave syrup
- 1 tsp Vanilla Powder
Process biscuit ingredients in a food processor until it reaches a dough-like consistency.
Roll mixture into a large ball and flatten on cutting board with a rolling pin.
Cut in circle shapes with cookie cutter and refrigerate until firm. You can freeze to speed up the process (I freezed them).
Drain cashews and blitz filling ingredients in the food processor. Mixture should be creamy and smooth.
Spread filling onto chilled cookies and sandwich together.
Store cookies in the fridge.
Tip! If you’re getting hard to roll the cookie dough, use corn starch on the rolling mat. Then the dough won’t get stuck on the mat.
Tip! if you don’t have a cookie mould, you could use a glass for that.
