Pasha

It is is a festive dish made mostly from curd, almonds and raisins. It is made in Eastern Orthodox countries which consists of food that is forbidden during the fast of Great Lent. It is made during Holy Week and then brought to Church on Great Saturday to be blessed after the Paschal Vigil. The name of the dish comes from Pascha, the Eastern Orthodox celebration of Easter.

You’ll get a big cake for 12:

  • 1kg curd
  • 4 egg yolks
  • 1 cup sugar
  • 1 stick butter
  • 1 cup sour cream
  • ½ cup chopped almonds
  • 1 cup raisins
  • handful of frozen or dried cranberries
  • pinch of vanilla

Whisk egg yolks with sugar until cream is light, whisk in soft butter. Add sour cream and heat the mixture until it gets thicker, but to not cook. Add curd, mix It well. Finally add almonds, cranberries, raisins and vanlla. Prepare a mould, use sieve as a mould if you don’t have pasha mould. Cover it with slightly wet cheese cloth. Pour cream into mould, so it could drain. Cool the cake overnight, at least 12 hours. Turn out the cake from the mould and decorate.

Tip! Grate in some lemon zest or squeeze some lemon juice over the cake.

 Traditsiooniline pasha

  • 1kg kohupiima
  • 4 munakollast
  • 2,5 dl suhkrut
  • 120 g võid
  • 1 väike pakk hapukoort
  • 75 g hakitud mandleid
  • 100 g rosinaid
  • peotäis külmutatud või kuivatatud jõhvikaid
  • noaotsaga vaniljet

Vahusta munakollased suhkruga, vahusta hulka pehme või. Lisa hapukoor ja kuumuta segu kuni see veidi pakseneb, mitte keeta. Segu hulka kohupiim, sega korralikult. Seejärel lisa mandlid, vanilje, jõhvikad ja rosinad. Vala segu niiske riidega vooderdatud pashavormi või niiske marliga vooderdatud sõelale. Lase nõrguda vähemalt üleöö. Tõsta vormist välja ja kaunista.

Tip! Riivi sisse ka sidrunikoort või pigista sidrunimahla järgmisel päeval koogile.

Tip! Kui sinu kohupiim juba sisaldab suhkrut, siis kasuta 1 dl suhkrut 3 dl asemel.
